Cancellate are part of the local culinary folklore, they reflect the genuine culinary tradition of Abruzzo region. They are waffle-like cookies and they are very often stored in the local houses, ready to be serve to the tourist visiting, in particular in May, during the celebration "Festa dei Banderesi" in honour of local patron saint S. Urbano.
The ingredients are few: eggs, sugar, evooo and flour.
The batter is smooth, mixing slowing eggs and sugar, the evoo and lastly the flour.
For each egg add 2 spoons of sugar and 2 spoons of evoo, flour as required.
They need to be cooked on antique decorated iron cast, on the heat of the stove for few minutes.
Simply and genuine sweet as its ingredients.
